Cooking with true Master

Charlene  www.charlenetrist.com showed me her fabulous smoked egg ravioli in her home kitchen on the outskirts of Melbourne  https://youtu.be/1U88mr4v_hE     Her focus was on all the sensual pleasures of cooking: touch and taste, smell and sound – perfect for a blind person.

She is absolutely at the top of her game having just gained a Le Cordon Bleu Masters Degree in Gastronomic Tourism.  Charlene was also one of only a handful of people selected to represent Australia at the  6th MAD Symposium in Copenhagen last year where she had the chance to rub shoulders with the restaurant industry elite. She is now busy working on the development of bespoke food and wine tours and would love to become a culinary destination scout for food and travel shows and movies.

I’ve been remembering many of the people I met during the Baking Blind world tour and it is humbling that so many have gone on to  amazing personal successes yet still gave me their time and shared their knowledge.  My little video gives just a glance of Charlene’s background and how food changed her life: after difficult school days,  she emerged like a butterfly as soon as she got in to the kitchen.

I was incredibly slow at making the pasta as there were several steps that were a bit tricky without sight – next time, there’s the final dish.
